It should be (C) understanding

Because as a human being, we have understanding capability, which is not available with other creatures (nonhuman).

You made an assumption correct. However, it is not what we are looking for to solve the sentence.

As an animal group, we are entirely acceptable at gaining from ongoing experience. It's what's known as the (i) _____ heuristic –
the propensity to gauge the probability of an occasion dependent on our capacity to review models.

Blank (i)
receptiveness
tolerance
understanding
openness
accessibility

Here, after the 1st full-stop, 2nd sentence is resembling the 1st sentence. In the 1st sentence, "at gaining from ongoing experience" is equal to "heuristic –
the propensity to gauge the probability of an occasion dependent on our capacity to review models." So in the blank there should be something similar to "entirely acceptable", which means the human has the power to utilize or access.
Therefore the answer will be (E) accessibility.
