ETS gives official percentile figures for individual sections. but what about the ENTIRE test (i.e., verbal and quant combined)?

No only percentiles for each section.

ETS doesn't provide composite percentiles for the GRE, so your best bet is to use GMAT percentiles as a comparison point.
