We know that today's professional field is only getting more fiercly competitive. Now employers demand seem to shift towards expertise in very specific skillset that generally do not coincide with other specific skillsets. Naturally, those with more aptitude will land the jobs - and it is only possible to develop skills by focusing on working on them which means alloting more time. If universities lighten the burden of students by excluding courses not strictly necessary for their respective fields, then the students can easily focus more on developing their skills.
Speaking of burdens, taking more courses is also more resource-costly to the universities themselves. More courses is synonymous with more pressure to faculty and infrastructure. Surely, it is preferable to teach students who are completely dedicated to a course because it is related with the field they plan to spend the rest of their life in rather than students who are only taking it (sometimes half-heartedly) for no reason other than fulfilling the tedious course requirements.
When a student pursues a field of their interest in an university, their preference would be to gain as much knowledge as possible while conserving as much as possible of their resources which is time and money. It is no secret that student loans place a huge burden on graduates. If they can join the professional field earlier then it would reduce their tuition fees while simultaneuosly enabling them to start earing money sooner i.e. paying off the loans faster. So from a financial perspective, it is quite pragmatic to take only the necessary courses to graduate earlier.
Pragmatism often comes with discarding some possibilities. In this case, we can consider when students are not sure about which field they want to pursue when they enroll in university. Taking courses only focused on a specific fields would constrain their opportunities to consider and learn more about other fields. It also goes without saying that individuals without posseing a variety of knowledge are by no means well rounded and can be biased/less informed when they consider certain issues or make decisions. Another important thing is subjects which are not in trend may get too neglected because of students not being enrolled in them in enough numbers.
In conclusion, while there are certain merits to taking courses in various fields, requiring students to take courses only withing their field of interests would certainlh be a pragmatic decision for the universities.
