In 2011, the test-makers made several changes to the GRE, and these changes included the addition of a FEW extra topics (boxplots, normal distributions, etc). The changes were definitely NOT substantial.

As for whether the official practice tests are reliable indicators of your score on test day, I'd say that the official practice tests are good predictors.
Keep in mind that the test is computer adaptive by section.
So, if you perform really well in the first quant section, then the questions you see in the second quant section will be quite hard.
Conversely, if you perform poorly in the first quant section, then the questions you see in the second quant section will be easier.
