because does not match with the meaning of the sentence.

read carefully the sentence

people adjust their style and the style as when you dress up could be how: casual , formal with a tie, a mismatch maybe jeans and jacket...the same is here.

They adjust their style and are more or less formal....

A bit of common sense and the question become easy

Thoughtful and formal both are contending choices. But at the end of the sentence, it mentions clergy and legal officials with whom we speak formally and they are also formal employees. Moreover, when we talk with our friends, we do not speak thoughtlessly.

Why is the third blank grammar? Isn't grammar more appropriate for written language instead of spoken language while relaxing friends? I thought verbiage would be a better fit for spoken language.

because it means vocabulary. You instead change the tone and style. Therefore, you are less formal and create more simple grammar sentence
