The first blank talks about how there are "things" that fall under the heading of biotechnology that one wouldn't expect. We want a word that describes what these "things" might be. By reading further into the passage we see various jobs listed - brewers of alcohol and agricultural developers. Therefore, we want a word that describes a job. "Verisimilitudes" means "truths." This does not describe a field of work and therefore is incorrect. "Denigrations" means "defamations." These are insults and not fields of work. "Vocations" means "life's work." This describes the jobs that unexpectedly fall into the category of "biotechnology."
The last sentence is comparing what you would expect to fall under the heading of "biotechnology" (medical procedures of a certain quality) with what you wouldn't expect ("rough-and-tumble" jobs). Therefore, we want a word that would contrast with the "rough-and-tumble" description given to the latter group of jobs. "Unsophistication" means "lack of refinement." This relates to "rough-and-tumble" and therefore is incorrect. "Fallacy" means "misconception." This word does not contrast the scientific procedures with the "rough-and-tumble" jobs. "Exactitude" means "precision." This word contrasts nicely with "rough-and-tumble."
